Surgaring 2005 Part 1

The tinsy taste of spring two weeks ago was enough to give me a gallon and half of sap from the Maple tree in our front yard. A few nights of boiling brought that gallon and a half down to a pint of syrup. That is really an incredible yield for a gallon and a half of sap (a normal Maple tree in the forest would have taken three times as much sap for that yield). Last Sunday's pancake breakfast was all the sweeter with our own maple syrup. Since that warm up, our Maple tree has been frozen and I wait again for the coming spring to complete the 2005 North Hill sugaring season.
